THIN CAKE to cous cous, lime and grapefruit
I Ingredients for a 18x18 cm square mold
-for custard with lime and ginger
  • 3 egg
  • 30g flour 00
  • 60g sugar
  • 350ml fresh whole milk
  • the peel of a lime
  • a piece of ginger fresh
-per il cous cous al lime e pompelmo 
  • 125gr di cous cous precotto ( il mio era di 4 cereali : grano duro, farro, kamut e mais) 
  • 125ml di succo di agrumi filtrato (circa 2 lime + ½ pomplemo rosa) 
  • 75gr di zucchero semolato 
  • 10gr di burro 
  • zenzero in polvere 
-per lo dusting
  • icing sugar to taste
Prepare the cous cous . Boil the juice of citrus fruits and pour it on cous cous, add a pinch of salt. Cover with a lid and allow to swell for about 4-5 minutes. Add the butter, sugar, a pinch of ginger, shelling the couscous with a fork and let cool.
Prepare lime custard. In a small saucepan mix flour with sugar, add egg yolks and mix well with a wooden spoon. Add the milk wire, a little at a time, stirring without forming lumps, add a piece of fresh ginger, lime zest, place over heat and bring to boil stirring constantly. When the cream thickens, turn off and let cool, stirring often to prevent the formation of the surface patina.
When the cream is cold, add the compound of cous cous and mix well.
Pour all in a pan lined with parchment paper (the thickness will be a couple of inches, no more) and bake in preheated oven A175 ° C for about 40 minutes, until the surface of the cake is lightly browned and appear small crepe.

Sì, sono sicura che lo siete, anche perchè in palio per i 5 vincitori ci saranno oggetti deliziosi, ideati e realizzati a mano dalla bravissima Tiziana ! 
Ah, dimenticavo! Avrò l’onore di essere giudice per la categoria “ Primi Piatti ” e insieme a Tiziana e alle mie “colleghe” d’avventura vi aspetto numerosi.
